It is distinguished from Savoy cabbage by the appearance of the head consisting of thick, overlapping, smooth, green or red leaves. It can be eaten cooked, stewed, braised, sautéed, or raw in mixed salads.

The round cabbage, commonly known as ‘sauerkraut’, originates from the combination of the Alsatian words ‘sûr’ and ‘krut’, which when translated make up the phrase ‘sour grass’, and in the culinary sphere is used in the typical German dish ‘Sauerkraut and Sauerkraut’. One particularity connected with this type of cabbage is its discovery, which dates back to the time when the Great Wall of China was built. At that time, Chinese workers had to leave the fields due to a very harsh winter. On their return, they discovered that the cabbage, despite its different taste, was still edible as it had been protected from the air and its fermentation had remained intact.
